Pumpkin Spice Protein Bars

Pumpkin Spice & Everything Nice
Ingredients you'll need: Oat Flour, RAW Whey Isolate Vanilla or RAW Vegan Vanilla Protein Powder, Ground Cinnamon, Ground Nutmeg, Ground Cloves, Ground Allspice, Pink Himalayan Sea Salt, Pumpkin Puree, Almond Butter, Vanilla Extract, Dairy- Free Chocolate Chips
Optional: Peanut Butter Chips, & whatever else you can think of!
STEP 1: Get an 8x8 (or as close as you have to this) baking dish and line it with cooking foil or parchment paper.
STEP 2: In a large bowl, add 2 cups of oat flour, 1/2 cup of protein powder, 2 teaspoons cinnamon, 1/4 teaspoon of nutmeg, 1/8 teaspoon of cloves, 1/8 teaspoon of allspice, and 1/4 teaspoon salt. Stir well to combine.
STEP 3: Add 1 cup of pumpkin puree, 1/4 cup of almond butter, 2 tablespoons of almond milk to the dry ingredients. Stir until a firm dough forms, kneading with your hands if necessary.
STEP 4: Add dough to the lined pan & press down to form an even layer.
STEP 5: In a separate small bowl, add 1/2 cup of chocolate chips. In 30 second intervals, microwave the bowl till the chocolate is melted; stirring in between.
- Add 1 tablespoon of almond butter and 1 tablespoon of almond milk and stir until smooth.
STEP 6: Pour chocolate over the dough in the pan and spread into an even layer.
STEP 7: Place in the freezer for at least 30 minutes, then cut into 12-16 bars.
