Scrambled Eggs with Spinach and Feta

Ingredients You'll Need: 4 large eggs, 1 cup fresh chopped spinach, 1/4 cup crumbled feta cheese, 1 tablespoon olive oil, Pinch of Salt and Pepper

Optional: diced tomatoes, chopped fresh herbs (parsley or chives)

STEP 1: Crack the eggs into a bowl and whisk them together until the yolks and whites are well combined. Season with a pinch of salt and pepper.

- Chop the fresh spinach and crumble the feta cheese. Set aside.

STEP 2: Place a non-stick skillet over medium-low heat and add the olive oil. Allow it to coat the bottom of the pan evenly.

STEP 3: Add the chopped spinach to the skillet and sauté for about 1-2 minutes until it wilts and becomes tender.

STEP 4: Pour the whisked eggs into the skillet with the sautéed spinach.

- Let them sit for a few seconds until they start to set around the edges.

- Gently stir the eggs with a spatula, pushing them from the edges towards the center.

- Continue to cook and stir until the eggs are mostly set but still slightly runny.

- Sprinkle the crumbled feta cheese evenly over the partially cooked eggs.

STEP 5: Continue to cook and stir for another minute or so, until the eggs are fully set but still creamy. Be careful not to overcook, as eggs can become dry.

STEP 6: Transfer the scrambled eggs with spinach and feta to a plate. top with diced tomatoes and chopped fresh herbs for extra flavor and freshness.

- Serve your protein-packed scrambled eggs hot and enjoy a nutritious and delicious breakfast!
