Chocolate Chip Protein MuffinsĀ 

Ingredients You'll Need: 2 Eggs, 1 1/4 cups Greek yogurt ( or a dairy-free alternative) , 2 Bananas, 2 cups of Rolled Oats, 1/2 cup RAW Vegan Protein, 1/4 cup of Maple Syrup, Dash of Vanilla Extract, 1 1/2 teaspoon of Baking Powder, 1/2 teaspoon of Baking Soda, 1/2 teaspoon of Pink Himalayan Sea Salt, 1/2 cup of Chocolate Chips

Optional Add- Ins: Berries, Granola, Chopped Nuts, Seeds, Crushed Cookies

Time to Start:

STEP 1: Preheat oven to 400 degrees F

STEP 2: Grab a standard muffin tin and use paper liners to keep this recipe oil free.Ā 

STEP 3: In a small bowl, scrambleĀ together 2 eggs.

Pour all ingredients except toppings into a blender.Ā 

Blend for 1- 2 minutes, or until smooth.Ā 

Scrape down sides to make sure everything gets blended together.Ā 

STEP 4: Pour mixture into each muffin tray slot about 3/4 the way upĀ 

Ā 

Halfway ThereĀ 

STEP 5: Sprinkle the chocolate chips in the muffins and add in any otherĀ toppings you'd like on top.

Don't press the toppings into the batter

- it'll make them flat šŸ‘ŽšŸ¼

STEP 6:Ā Bake for 15-18 minutes, or until a light golden brown color.Ā 

Insert a toothpick in the middle of a muffin or two, if it comes out mostly clean then they are done.Ā 

STEP 7: Let muffins cool for 10 minutes in pan. Transfer to a cooling rack for another 10-15 minutes.Ā 

The muffins might flatten out a little bit, that's normal.Ā 

STEP 8: Wait for muffins to cool to avoid the muffins sticking to the liner.
